From Farm to Table
LDFF’s program provides cooking and nutrition classes to
city residents who are most in need. It provides hands-on cooking classes and
live discussions. The Lessons cover meal preparation, grocery shopping, food
budgeting and guidance on food safety practices. and shows how them how to make
healthy food choices and substitutions by explaining nutrition labels, talking
about what’s in the ingredient lists.
The lessons also teach students how to prepare and shop
sensibly for healthy meals on a limited budget and discuss include ‘My Plate”
as a tool for healthy eating, planning balanced meals, benefits of fruits and
vegetables, improving eating habits, cutting the fat, serving sizes, making
better selections at the grocery store.

AFRICAN
HERITAGE DIET
The African
Heritage Diet is a way of eating based on the healthy food traditions of people
with African roots. This healthy way of eating is powerfully nutritious and delicious, and naturally meets the guidelines experts
recommend for supporting good health. A Taste of
African Heritage brings African food traditions to life through hands-on
experience.
6-Week Course
This 6-week cooking curriculum teaches history, nutrition, and cooking techniques that reconnect participants with the vibrant, healthy traditions of the African Diaspora. The course is based on the Oldways, A Taste of African Heritage curriculum. The course is designed to teach people how to eat and cook healthfully, traditionally, and enjoyably through hands-on experience. The class covers a specific food group each week from the African Heritage Diet Pyramid. The outline of the class is as follows:
- Week/Lesson 1: Traditional Herbs and Spices
- Week/Lesson 2: Greens
- Week/Lesson 3: Whole Grains
- Week/Lesson 4: Beans and Rice
- Week/Lesson 5: Tubers and Stews
- Week/Lesson 6: Fruits and Vegetables
